Sweets for my sweetie: Instead of overdosing on cheap chocolates and candy, why not make your own ability truffles? It's so easy, and all you need is semisweet chocolate, vanilla, cream cheese and icing sugar! Here's a quick recipe from AllRecipes.com:

Ingredients:

1 (8 ounce) box of cream cheese, softened

3 cups icing sugar

3 cups semisweet chocolate chips, melted

1.5 teaspoons vanilla

In a large bowl, beat cream cheese until smooth. Moderately beat in icing sugar until well-blended. Stir in melted chocolate and vanilla until no streaks remain. Refrigerate for about 1 hour. Shape into 1 inch balls.

Cake Fillings - What You Need to Know Now That It's Warm

As a cake decorator who sells their cakes or a home baker who prepares desserts for friends and family, it is foremost to know all of the facts about fillings, which ones need to be refrigerated and which can be left out at room temperature. Your prestige can depend on it, and you honestly do not want to make anything sick.

We know that butter cream frosting does not hold up well in the heat. Think about a fondant covered cake with a filling. Do you think it's safe to be out in the heat? Maybe not. Chocolate ganache filling melts if left in the heat for a duration of time. Did you know that? It's deceiving. It sets firmly so you can use it as a filling in sculpted cakes and are able to shape it into truffles that are delicious to eat but when a ganache filled cake sits out in the heat, the ganache gets soft and starts to disintegrate which, if it is a stacked cake, could come tumbling down.

Fillings can be made from scratch or bought. The fillings made from scratch are very perishable and should remain refrigerated. New filling recipes should not be tried the night before an event. If you have to do something new, test the method out two weeks before. That way, if you need to make changes, you have time to do it or get help.

Fillings that come in sleeves at your local cake store can be used right out of the sleeve as they are and the remainder can be refrigerated up to 6 months.

If you decide to use fresh fruit in your filling, please make sure to use the freshest fruit you can find and get ready it as close to serving time as possible. If you must put the cake together the night before (for example, strawberry cake with fresh strawberries in the middle, cut the fruit in half. Smaller pieces will get mushy overnight and not make a good presentation.

Not sure how to properly whip the cream for your filling, use the aerosol can version, sprinkle with confectioner's sugar and add your fresh fruit and cover with more canned whip cream and more confectioner's sugar.

If your cake has a fresh fruit filling and the cake is covered in fondant, stack the cakes at your venue. The fondant will get gummy if you stack them sooner.

Refrigerated Fillings

If your event is held indoors whether it is a big hall or someone's home, feel free to use a filling that has to be refrigerated. Cream cheese, custards, pastry cream, whipped cream, puddings, and any mousse type fillings that include fresh fruit are excellent for these venues. Cakes can remain refrigerated until right before serving. Let habitancy know when they invite these fillings that there needs to be space in the refrigerator to store the cake until serving. A lot of habitancy fill the refrigerators with everything else and then have to scramble to find room for the cake. It cannot sit out for a long duration of time or there will be a disaster.

Speaking of disaster, please do not mix up a batch of the pudding mix as it is instructed on the box and use that as a filling for your cakes. Unless it's made like a mousse, it will not hold up to the weight of the cake on top and will ooze out and make a mess.

When in doubt, make a test cake to see what happens when you refrigerate your cake with the intended filling and frosting/fondant. You don't want to be surprised about this.

Refrigerated fillings are delicious, though sometime they are a double-edged sword. Butter cakes do not taste their best right out of the refrigerator. Incorporate them with a refrigerated filling, and you have to make a choice. Cold cake or warm filling. whether one is not good. And, you don't want habitancy telling the host/hostess that the cake was "dry" because it was cold. Switch to a separate cake method or use sugar syrup on your cake layers before assembling to help the cake withhold moisture so it doesn't dry out while in the refrigerator.

Remember that gum paste and royal icing decorations on a cake will be ruined if it is refrigerated.

Non-Refrigerated Fillings

Any of the sleeves of fillings bought at your local cake decorating store should be fine at room temperature. So are the jellies, preservatives and ganache. Whenever using the fillings in the sleeves, remember the dam of frosting colse to the edge of the cake. You don't want it oozing out once the cake settles. Trust me on this one. That is why it's best to use the following technique for fillings.

Make sure that you have a thick dam of frosting going colse to the edge of the cake. Add no higher than a 1/4" high layer of filling. For example, whenever I use lemon filling, I split the cake layer in half, add the dam of frosting, spread the lemon filling and then put the two layers together. Frosting goes in the middle of the cake layers so it will be:

Frosting dam - Lemon filling
Lemon cake
Middle frosting layer
Lemon cake
Frosting dam - Lemon filling
Lemon cake
Cake Board

Always refrigerate to let the frosting set. Once it's set, cover the cake in fondant. Set your cake in a cake box that has room for it to fit without the fondant touching the top or sides of the box. Refrigerate again to set. This is your assurance procedure when you deliver the cake. If the party is at your house, and it's cool inside, you can leave it out. Refrigerating this kind of cake makes it easier to slice so that the filling doesn't ooze out of every slice. You want a nice presentation.

When you cake is removed from the refrigerator, please remember to give it time to "sweat." Don't touch it while this duration or you will leave a mark. Let the cake come to room temperature. Usually, by the time you voyage to your destination, and it's time to serve the cake, the fondant will be okay to slice and the dewy, shiny look will be gone.

What Kind of Filling is It?

Lemon, chocolate, caramel, banana, apricot, chocolate chip, and some other fillings are honestly recognized in a cake just by seeing at them. Don't make your guests guess what they're eating. Make tent cards for each table that includes this facts or add it to the menu card. With so many food allergies out there, you don't want to be remembered for manufacture man sick.

To ice or Not to Freeze

Never ice a cake filled with a custard filling because it will separate. Whipped cream cakes have been frozen. It depends on the type of whipping cream used. Check the box to see if it tells you that it can be icy because you do not want your cake to weep. Rose Berenbaum, in her book, The Cake Bible, shows you how to stabilize the whipping cream with gelatin.

The first solid chocolate was produced by combining cocoa powder and sugar with the newly advanced cocoa butter and extra flavorings like vanilla. Later, in 1879, the Swiss began producing their own unique brand of chocolate. Swiss entrepreneur Henri Nestlé advanced an exclusive recipe known as "milk chocolate" by combining the new solid chocolate with a powder made of dehydrated milk and sugar.

Nestlé's new milk chocolate was an instant sales phenomenon, and soon spurred a host of imitators around the world. For example, in the United States the Hershey Corp. Began to yield a very similar type of milk chocolate, which many population believe was advanced by "reverse engineering" the illustrious Nestlé's chocolate bars. In any event, Hersey's milk chocolate became extremely favorite in North America, and continues to be so today.

But it was back in France where Nestlé's milk chocolate had the most influence. Experimentation among chocolate producers in France led to the improvement of ganache, which is the center core of the modern truffle. The Ganache was an ultra-smooth aggregate of solid chocolate and cream that had a velvety, liquid-like texture. Chocolate truffles began to be made using this confection, and were often flavored with other ingredients such as dark or white chocolate, cocoa powder, or almonds or other chopped nuts.

Although truffles originated in France, they quickly became favorite throughout all of Europe, North America, and eventually even in the Far East. Even the name "truffle" is French, and means "a small mushroom." The sweets were given this name because they looked very similar in shape to small mushrooms which grew wild in the French forest.

Since that time, French chocolate truffles have come to narrate the finest and most luxurious candies available. In fact, truffles are taken so seriously in France that there is a contest every year to judge the best from each individual region of the country. And in many French chocolate output factories, the finest and freshest ingredients continue to be reserved for exclusive use in truffles.

These days there are a great many dissimilar varieties of truffles available, but by far the primary chocolate truffles are still among the finest delicacies available anywhere.

Ina Garten's Roasted Turkey Roulade and Baked Sweet Potato "Fries"

I don't know anyone who looks forward to carving a turkey on Thanksgiving. You're at the table, everyone's watching, and you're struggling to carve a hot bird. Instead, I decided to make a roasted turkey breast stuffed with all kinds of delicious things--sausage, cranberries, and figs. No bones and it cooks to juicy perfection in under two hours. How easy is that?

Sweet potatoes are available year-round, but their prime season is really autumn and winter. Choose potatoes that are smooth and unblemished, and use them fairly soon because they don't keep as well as other potatoes. These potatoes are crispy like fries but they're better for you because they're baked. --Ina Garten

Roasted Turkey Roulade
(Serves 6 or 7)





















3/4 cup large-diced dried figs, stems removed
3/4 cup dried cranberries
1/2 cup Calvados or brandy
4 tablespoons (1/2 stick) unsalted butter
1-1/2 cups diced onions (2 onions)
1 cup (1/2-inch-diced) celery (3 stalks)
3/4 pound pork sausage, casings removed (sweet and hot mixed)
1-1/2 tablespoons chopped fresh rosemary leaves
3 tablespoons pine nuts, toasted
3 cups Pepperidge Farm herb-seasoned stuffing mix
1-1/2 cups chicken stock, preferably homemade
1 extra-large egg, beaten
Kosher salt and freshly ground black pepper
1 whole (2 halves) turkey breast, boned and butterflied (5 pounds)
3 tablespoons unsalted butter, melted

Place the dried figs and cranberries in a small saucepan and pour in the Calvados and 1/2 cup water. Bring the mixture to a boil over medium heat, then lower the heat and simmer for 2 minutes. Remove from the heat and set aside.

Meanwhile, melt the butter in a large (12-inch) skillet over medium heat. Add the onions and celery and sauté until softened, about 5 minutes. Add the sausage, crumbling it into small bits with a fork, and sauté, stirring frequently, for 10 minutes, until cooked and browned. Add the figs and cranberries with the liquid, the chopped rosemary, and pine nuts, and cook for 2 more minutes. Scrape up the brown bits with a wooden spoon.

Place the stuffing mix in a large bowl. Add the sausage mixture, chicken stock, egg, 1 teaspoon salt, and 1/2 teaspoon pepper and stir well. (The stuffing may be prepared ahead and stored in the refrigerator overnight.)

Preheat the oven to 325 degrees. Place a baking rack on a sheet pan.

Lay the butterflied turkey breast skin side down on a cutting board. Sprinkle the meat with 2 teaspoons salt and 1 teaspoon pepper. Spread the stuffing in a 1/2-inch-thick layer over the meat, leaving a half-inch border on all sides. Don’t mound the stuffing or the turkey will be difficult to roll. (Place the leftover stuffing in a buttered gratin dish and bake for the last 45 minutes of roasting alongside the turkey.) Starting at one end, roll the turkey like a jelly roll and tuck in any stuffing that tries to escape on the sides. Tie the roast firmly with kitchen twine every 2 inches to make a compact cylinder.

Place the stuffed turkey breast seam side down on the rack on the sheet pan. Brush with the melted butter, sprinkle generously with salt and pepper, and roast for 1-3/4 to 2 hours, until a thermometer reads 150 degrees in the center. (I test in a few places.) Cover the turkey with aluminum foil and allow it to rest at room temperature for 15 minutes. Carve 1/2-inch-thick slices and serve warm with the extra stuffing.


Baked Sweet Potato "Fries"
(Serves 4)




















2 medium sweet potatoes, peeled
2 tablespoons good olive oil
1 tablespoon light brown sugar
1/2 teaspoon kosher salt, plus extra for sprinkling
1/2 teaspoon freshly ground black pepper

Preheat the oven to 450 degrees.

Halve the sweet potatoes lengthwise and cut each half into 3 long spears. Place them on a sheet pan and toss with the olive oil. Spread the potatoes in one layer. Combine the brown sugar, salt, and pepper and sprinkle on the potatoes. Bake for 15 minutes and then turn with a spatula. Bake for another 5 to 10 minutes, until lightly browned. Sprinkle lightly with salt and serve hot.

His bite can Diamondize you, and his lethal "glorious light" attack is equivalent to PSI Flash Ω and will likely paralyze or kill anyone without a Night or Sea Pendant. Diamond Dog starts with a Power shield, so use the Neutralizer to get rid of it before unleashing whatever Multi Bottle Rockets you have. Keep at it, and eventually you'll topple him. After defeating Diamond Dog but before going into the sanctuary, you'll want to shuffle your items a bit. Be sure Ness has the Sea Pendant and Franklin Badge. DO NOT EQUIP THE CASEY BAT! Clear his inventory out of any other items and then give him a few good healing items, like Magic Truffles and Brain Food Lunches. Bags of Dragonite are good, too. When you're ready, go into the sanctuary. Ness' Sound Stone will record the final melody of Fire Spring and then play the completed tune. You'll then be transported to a gray flashback sequence where Ness finds himself looking at his own infancy. This was when Ness first realized his psychic ...

Heeheehee.*** www.youtube.com I made some raw vegan chocolate truffles today for a gathering I'm going to tomorrow, and thought I'd share the recipe with all you youtubee youtubers! It's one of my favourite raw recipes because it's super easy & quick, ridiculously yummy, and very pretty, especially if you roll the truffles in shredded coconut! They look like "real" truffles, and by real, I mean the typical kind you'd buy at a "real" gourmet chocolate store... but of course they're way healthier! Here's the recipe: 3 cups raw walnuts Approx. 2 tbsp ground flax seed (not essential, but I'll sometimes add it in for the health benefits) Approx 1 cup dates (if you have a really big sweet tooth, add a few more, although totally not necessary!) Sometimes its nice to NOT have sickeningly sweet truffles! The 3 cups to 1 cup ratio give it the perfect amount of sweetness I feel! :) 5 organic strawberries. If you want to mix it up, make a variety 5 pack! Make a few with strawberries, raspberries, coconut meat, cinnamon, and orange zest (grated orange peel)! OMG orange zest makes them taste DIVINE! :D They are definitely one of my all-time fav flavours! Ok, so now that you have all your ingredients, pour the nuts in the food processor & puree (meaning blend, chop & let your processor do its thang!) Add in dates, strawberries and/ or orange zest, etc ...

Cacao is an evergreen tree that commonly grows from 10 - 30 feet in height and is native to the tropical regions of the American continents. It is found plainly in the Amazon River Basin as well as the Orinoco River Basin, and can also be found bearing its "fruit" at the base of the Andes Mountain range in foothill elevations of 600 - 1300 ft. Let's face it, many of us are chocoholics. If we weren't, we wouldn't be constantly bombarded with ads for Ring Dings, Devil Dogs and what have you. Well, as good as chocolate might taste, especially that really incredible German chocolate, it is probably one of the worst things you can put in your body. In this article, we'll cover just a few of the dangers of chocolate and chocolate based products. You may not ever eat other Ring Ding for the rest of your life.

To further add insult to injury, most commercially available chocolate products are loaded with chemicals to keep them fresh. Did you ever look at the expiration date on a package of Ring Dings? Nothing should last that long and still be edible.

So, as much as we all love chocolate (I am an ex addict), it is something that we can all do without. I personally have been chocolate free for 6 years and don't miss it one bit.

Try eliminating it from your diet before it begins to eliminate you.

In this episode of the video series about barging through France, host Richard Goodwin sails his boat about 18 kilometres north of Lyon to a small village called Les Collanges and this where Paul Bocuse was born and where now has his most famous restaurant. Paul Bocuse, a legend among French chefs agreed to show me round his restaurant at Les Collanges. He started off with his wall of honouring many international chefs who have made history in the culinary world. Paul explains that Lyon is the larder of France and he gives the geographical details of the delights of the region. A little way down the river, Paul shows be his passion which he has housed in an old abbey. He has over the years amassed a large collection of mechanical organs, he also uses the hall for large dinners. Paul shows us how to cook ham in the traditional method of the region. He cooks the ham in hay and a large cauldron. Paul says that the secret of Lyon's culinary fame comes entirely from the good produce that surrounds the city. He tells of the food in his father and grandfather's time and then he took me to his garden where he grows the vegetables for his restaurant. He says that a lettuce you have picked in the morning tastes completely different from anything you buy in the market. We take a tour of Paul's kitchen which was an eye opener.
