Ina Garten's Roasted Turkey Roulade and Baked Sweet Potato "Fries"

I don't know anyone who looks forward to carving a turkey on Thanksgiving. You're at the table, everyone's watching, and you're struggling to carve a hot bird. Instead, I decided to make a roasted turkey breast stuffed with all kinds of delicious things--sausage, cranberries, and figs. No bones and it cooks to juicy perfection in under two hours. How easy is that?

Sweet potatoes are available year-round, but their prime season is really autumn and winter. Choose potatoes that are smooth and unblemished, and use them fairly soon because they don't keep as well as other potatoes. These potatoes are crispy like fries but they're better for you because they're baked. --Ina Garten

Roasted Turkey Roulade
(Serves 6 or 7)

3/4 cup large-diced dried figs, stems removed
3/4 cup dried cranberries
1/2 cup Calvados or brandy
4 tablespoons (1/2 stick) unsalted butter
1-1/2 cups diced onions (2 onions)
1 cup (1/2-inch-diced) celery (3 stalks)
3/4 pound pork sausage, casings removed (sweet and hot mixed)
1-1/2 tablespoons chopped fresh rosemary leaves
3 tablespoons pine nuts, toasted
3 cups Pepperidge Farm herb-seasoned stuffing mix
1-1/2 cups chicken stock, preferably homemade
1 extra-large egg, beaten
Kosher salt and freshly ground black pepper
1 whole (2 halves) turkey breast, boned and butterflied (5 pounds)
3 tablespoons unsalted butter, melted

Place the dried figs and cranberries in a small saucepan and pour in the Calvados and 1/2 cup water. Bring the mixture to a boil over medium heat, then lower the heat and simmer for 2 minutes. Remove from the heat and set aside.

Meanwhile, melt the butter in a large (12-inch) skillet over medium heat. Add the onions and celery and sauté until softened, about 5 minutes. Add the sausage, crumbling it into small bits with a fork, and sauté, stirring frequently, for 10 minutes, until cooked and browned. Add the figs and cranberries with the liquid, the chopped rosemary, and pine nuts, and cook for 2 more minutes. Scrape up the brown bits with a wooden spoon.

Place the stuffing mix in a large bowl. Add the sausage mixture, chicken stock, egg, 1 teaspoon salt, and 1/2 teaspoon pepper and stir well. (The stuffing may be prepared ahead and stored in the refrigerator overnight.)

Preheat the oven to 325 degrees. Place a baking rack on a sheet pan.

Lay the butterflied turkey breast skin side down on a cutting board. Sprinkle the meat with 2 teaspoons salt and 1 teaspoon pepper. Spread the stuffing in a 1/2-inch-thick layer over the meat, leaving a half-inch border on all sides. Don’t mound the stuffing or the turkey will be difficult to roll. (Place the leftover stuffing in a buttered gratin dish and bake for the last 45 minutes of roasting alongside the turkey.) Starting at one end, roll the turkey like a jelly roll and tuck in any stuffing that tries to escape on the sides. Tie the roast firmly with kitchen twine every 2 inches to make a compact cylinder.

Place the stuffed turkey breast seam side down on the rack on the sheet pan. Brush with the melted butter, sprinkle generously with salt and pepper, and roast for 1-3/4 to 2 hours, until a thermometer reads 150 degrees in the center. (I test in a few places.) Cover the turkey with aluminum foil and allow it to rest at room temperature for 15 minutes. Carve 1/2-inch-thick slices and serve warm with the extra stuffing.

Baked Sweet Potato "Fries"
(Serves 4)

2 medium sweet potatoes, peeled
2 tablespoons good olive oil
1 tablespoon light brown sugar
1/2 teaspoon kosher salt, plus extra for sprinkling
1/2 teaspoon freshly ground black pepper

Preheat the oven to 450 degrees.

Halve the sweet potatoes lengthwise and cut each half into 3 long spears. Place them on a sheet pan and toss with the olive oil. Spread the potatoes in one layer. Combine the brown sugar, salt, and pepper and sprinkle on the potatoes. Bake for 15 minutes and then turn with a spatula. Bake for another 5 to 10 minutes, until lightly browned. Sprinkle lightly with salt and serve hot.

EarthBound - Carbon Dog & Diamond Dog

EarthBound - Carbon Dog & Diamond Dog Video Clips. Duration : 6.30 Mins.

This boss can be pretty troublesome if you're not careful. Carbon Dog packs brutal fire attacks, but he's very weak to Flash and Freeze. Use Jeff's Heavy Bazooka too, but do NOT use Multi Bottle Rockets! Once you've finished Carbon Dog, he'll transform into Diamond Dog. Diamond Dog has a power shield, and if you finished Carbon Dog with a physical attack, it will be reflected back at the attacker, which is why MBRs are a really bad idea. Diamond Dog has LOTS of HP and no real weaknesses. His bite can Diamondize you, and his lethal "glorious light" attack is equivalent to PSI Flash Ω and will likely paralyze or kill anyone without a Night or Sea Pendant. Diamond Dog starts with a Power shield, so use the Neutralizer to get rid of it before unleashing whatever Multi Bottle Rockets you have. Keep at it, and eventually you'll topple him. After defeating Diamond Dog but before going into the sanctuary, you'll want to shuffle your items a bit. Be sure Ness has the Sea Pendant and Franklin Badge. DO NOT EQUIP THE CASEY BAT! Clear his inventory out of any other items and then give him a few good healing items, like Magic Truffles and Brain Food Lunches. Bags of Dragonite are good, too. When you're ready, go into the sanctuary. Ness' Sound Stone will record the final melody of Fire Spring and then play the completed tune. You'll then be transported to a gray flashback sequence where Ness finds himself looking at his own infancy. This was when Ness first realized his psychic ...

Heeheehee.*** www.youtube.com I made some raw vegan chocolate truffles today for a gathering I'm going to tomorrow, and thought I'd share the recipe with all you youtubee youtubers! It's one of my favourite raw recipes because it's super easy & quick, ridiculously yummy, and very pretty, especially if you roll the truffles in shredded coconut! They look like "real" truffles, and by real, I mean the typical kind you'd buy at a "real" gourmet chocolate store... but of course they're way healthier! Here's the recipe: 3 cups raw walnuts Approx. 2 tbsp ground flax seed (not essential, but I'll sometimes add it in for the health benefits) Approx 1 cup dates (if you have a really big sweet tooth, add a few more, although totally not necessary!) Sometimes its nice to NOT have sickeningly sweet truffles! The 3 cups to 1 cup ratio give it the perfect amount of sweetness I feel! :) 5 organic strawberries. If you want to mix it up, make a variety 5 pack! Make a few with strawberries, raspberries, coconut meat, cinnamon, and orange zest (grated orange peel)! OMG orange zest makes them taste DIVINE! :D They are definitely one of my all-time fav flavours! Ok, so now that you have all your ingredients, pour the nuts in the food processor & puree (meaning blend, chop & let your processor do its thang!) Add in dates, strawberries and/ or orange zest, etc ...

What Is Cacao And Why Is Natural Chocolate Healthy?

For some infer I can't get the vision of John Matuszak out of my head. John Matuszak -- you know -- Sloth, from The Goonies! Choc-o-late...Ruth...Ba-by...Ruth. Cacao is an evergreen tree that commonly grows from 10 - 30 feet in height and is native to the tropical regions of the American continents. It is found plainly in the Amazon River Basin as well as the Orinoco River Basin, and can also be found bearing its "fruit" at the base of the Andes Mountain range in foothill elevations of 600 - 1300 ft. Above sea level. It is widely accepted by many cacao experts, that the tree was native to Mexico, and brought wild to be cultivated in South America.

It is now farmed in many tropical nations, and the largest market producer is undoubtedly the western African nation of the Republic of Côte d'Ivoire. Ghana, Indonesia and the Philippines also cultivate a leading whole of cacao, and the Americas round out the majority of the market farming.

The fruit of the cacao, known as the cacao pod, ripens to a hearty yellow or orange, and weighs about a pound. Within it, you'll find a load of seeds, which are commonly referred to as cacao beans. Each seed is made up of about 40 percent fat, which is often extracted and known as cocoa butter.

The Cacao Nib Craze

Is it true that Cacao Nibs, the peeled, crushed cacao seeds/beans, are full of antioxidants? Antioxidants that rival super foods like blueberries, and many antioxidant rich teas? Yes, it's all true. As a matter of fact, the cacao nib is also rich in good fat and minerals such as calcium, zinc, iron and potassium. All that good vigor stuff you'd get from drinking a Gatorade without the many grams of refined sugar. You'll also find a natural byproduct that is very much like caffeine. It even seems that the natural Mao inhibitors found in these tasty morsels can suppress an overactive appetite.

The Taste of Cacao

What do cacao nibs taste like? Chocolately and nutty. You can pick at it like granola, eat it by the spoonful like granola, grind it into your coffee... Not like granola... Sprinkle it on ice-cream, put it in a smoothie or a personal beloved -- dip a banana into them.

If you're intrigued, make sure you snag an organic range of the cacao nibs. Criollo cacao is the rarest of the organically produced cacao, and what you'd probably enjoy the most in your first sampling. You can commonly find the goods for -15 a pound, depending on where you shop. The Dangers In Chocolate

Let's face it, many of us are chocoholics. If we weren't, we wouldn't be constantly bombarded with ads for Ring Dings, Devil Dogs and what have you. If you counted the estimate of ads in newspapers, magazines and on Tv for some kind of chocolate product and tied them end to end, you could probably go to the moon and back a hundred times. Well, as good as chocolate might taste, especially that really incredible German chocolate, it is probably one of the worst things you can put in your body. In this article, we'll cover just a few of the dangers of chocolate and chocolate based products. You may not ever eat other Ring Ding for the rest of your life.

The cocoa bean, of which chocolate is partially made, is loaded with caffeine. This is a good part of the calculate why kids who eat a lot of chocolate are so hyper. The caffeine in some chocolate products is really greater than the caffeine in a cup of coffee or even a can of cola. Chocolate in children is like putting them on speed. One of the biggest causes of Adhd in children is because of chocolate and chocolate based products.

What Are Truffles

But caffeine is only part of the problem and really just the tip of the iceberg. If you ever tasted chocolate in its pure form, you probably noticed that it was really a slight on the bitter side. It really isn't sweet like the chocolate products that you are used to eating. The calculate these products are so sweet is because they are loaded with sugar. It is roughly impossible to find a chocolate based product that isn't loaded with sugar, surface of dietetic products, plainly because they quite really don't taste very good and there wouldn't be as big a market. As a result, the sugar contained in these chocolate products causes a estimate of problems together with diabetes, high blood pressure, hardening of the arteries, and way too many illnesses to list here. As a matter of fact, sugar is one of the prominent caused of condition problems in the United States.

To further add insult to injury, most commercially available chocolate products are loaded with chemicals to keep them fresh. Did you ever look at the expiration date on a package of Ring Dings? Nothing should last that long and still be edible.

So, as much as we all love chocolate (I am an ex addict), it is something that we can all do without. I personally have been chocolate free for 6 years and don't miss it one bit.

Try eliminating it from your diet before it begins to eliminate you.

Dark, White and Milk Chocolate - Just What is the Difference?

What creates the variation in the middle of dark, white and milk chocolates? Is it the color, or perhaps the flavor? Or is it just the history and the background behind each? Nutritional values, maybe? Or how about the ingredients of each? The development process? How about all of the above?

We all know that there are three separate types of chocolates. What we don't well understand are the differences in the middle of these, which cause each to be taken as an private substance! For example, did you know that white chocolate isn't well carefully to be chocolate? Many true chocolate aficionados might put white chocolate in a detach class -

What Are Truffles

The first and most characteristic that differentiates dark from white from milk chocolate is the confident color of each! While dark chocolate is a deep, rich brown due to the high amounts of cocoa in its composition, milk chocolate is a lighter shade of brown, showing the presence of milk. White chocolate on the other hand, is completely white since it has no part of the cocoa liquor that's present in the other two. This is also the theorize as to why white chocolate doesn't conform to the standards of chocolate

Another major variation in the middle of dark, white and milk chocolates is the history behind each. Chocolate was drunk as a spicy beverage about 2000 years ago, when no one had heard of mixing it with milk! When the cocoa press was first invented in 1828, solid eating chocolate was created. Thus dark chocolate was born. Later, in the year 1875, Daniel Peters created the first milk chocolate White chocolate came much later, after World War I, when it was introduced by the Swiss! Dark chocolate becomes more bitter as the number of cocoa liquor in it increases.

In terms of taste, dark chocolate is the bitterest, followed by milk chocolate which is normally semi-sweet in response to the lower quantity of cocoa liquor used, as well as the added sweetness of milk and sugar. White chocolate is completely sweet, since it has no cocoa liquor. Cocoa contains theobromine, a salutary substance that is extremely bitter in nature. This explains why dark chocolate is more of an acquired taste than a first love!

The other variation in the middle of these three types of chocolate is in the ingredients each contains. Dark chocolate is very simple, containing cocoa liquor, cocoa butter and sugar, whereas milk chocolate has a smaller quantum of cocoa liquor, cocoa butter, milk and sugar. White chocolate on the other hand, is more of a flavored candy containing cocoa butter, lecithin, sugar, milk solids and other flavorings.

As has been recently discovered, cocoa powder has many nutritional benefits, due to the flavonoids and polyphenols it contains, which are said to be antioxidants and comfort heart disease, high blood pressure, diabetes type Ii, and forestall a score of other diseases. Cocoa also contains epitachin, a flavonoid which widens the heart and blood vessels, prominent to reduced heart risks. Since dark chocolate has the highest number of cocoa present, it follows that dark chocolate has greater nutritional benefits compared to milk and white chocolate Milk chocolate also contains cocoa, but the goodness of it is ordinarily wiped out by the other saturated fats contained within! White chocolate having no cocoa content, has no nutritional benefits at all.

Another scenario where the differences in the middle of these three types of chocolate are stark is the consumption and popularity of each! Dark chocolate is normally a favorite with diabetic chocoholics, because of the low sugar content it contains. Milk chocolate on the other hand, is very favorite with the masses. If you're creating a gift basket without knowing your recipients taste, you're in the right if you contain a majority of milk chocolate goodies! White chocolates, on the other hand, tend to be a love at first taste choice. You whether like them or you don't!

There are obviously major differences in the middle of the three types of chocolate However, each of them is a sumptuous decadent satisfaction in its own way! When you're mental of chocolate you're obviously not going straight through the differences in the middle of them. What you are mental of is that moment when they melt in your mouth, and all is all right with the world! So today go ahead and enjoy that appetizing piece of chocolate after all you now know a little bit more about what you are eating!

History of Chocolate Truffles

The invention of the cocoa press in 1828 made possible separating the natural fat in cocoa beans, called cocoa butter, from the bean solids. This not only improved the consistency and taste of the remaining cocoa powder but made possible the amelioration of solid chocolate. Eating chocolate or solid chocolate, as opposed to drinking chocolate, was first produced in 1847 in Fry's chocolate premise in Bristol, England. Solid chocolate is a composition of cocoa powder, sugar, cocoa butter and often flavorings like vanilla. In 1879 Swiss Henri Nestle and Daniel Peter advanced milk chocolate by combining solid chocolate with milk powder. Experimentation in France and Switzerland led to the amelioration of ganache.

Ganache is the town component of a truffle. Ganache is a velvety flat composition of solid semisweet chocolate and cream. Cooked at just the right climatic characteristic it cools to form a rich and firm paste with intense chocolate flavor. A truffle is a confection made of a round ganache center, often flavored, covered with a shell of milk, dark or white chocolate. Truffles are often covered in cocoa powder, sugar or finely chopped nuts.

What Are Truffles

Perhaps originating in France, the truffle is named for its visual similarity to the French mushroom-like fungus of the same name. Like the traditional truffle, chocolate truffles have come to be synonymous with luxury and a sumptuous taste experience. Truffles are made in a wide range of tastes. In many chocolate houses the Chocolatier's finest ingredients are reserved for the truffle.
